Walnut oil is derived from walnuts, i.e., Persian walnuts. Different from majority of other nuts which are rich in monounsaturated fatty acids, walnut oil is made of polyunsaturated fatty acids – 72 percent of total fats, especially linoleic acid (58%) and alpha-linolenic acid (14%), whilst it does comprise oleic acid as 13% of total fats. Every 100 grams of walnut oil gives nearly 22.8 grams of monounsaturated fats, 63.3 grams of polyunsaturated fatty acids, and 9.1 grams of saturated fats.
